Figure-Friendly Fruit Pizza

I LOVE a good fruit pizza, especially in the summertime when fresh fruit is bursting at the seams! 

In my family, the arrival of the fruit pizza lets everybody know that spring has sprung and summer is officially here! Cousin Reggie throws his first big family bash as soon as the weather is consistently hot and then here comes Aunt Janice! She arrives proudly with that big, round pan covered in saran wrap. It’s so pretty it doesn’t even look real! It gets plenty of ooo’s and ahhhs as soon as she places it on the table. The kids are amazed that it’s fruit and a pizza all in one. Everyone anxiously digs in to taste their first sweet slice of “summer”…. EXCEPT ME!  Being that I’ve been trying to loose this muffin top stomach of mine all I can do is watch as they indulge in soft sugar cookie crust, sweet cream cheese spread and ripe, sugar-glazed fruit.

HEYYY!!! BIG GUT GIRLS WANT FRUIT PIZZA TOO YA KNOW! There was no way I was going to let my diet stand in the way of me and one of my favorite desserts!  I decided to make my own healthier version to take to a Girls Night In cookout. It was a huge hit and simply delish!   It really is a true crowd pleaser from kids to weight-watchers. It’s fast, easy, figure-friendly and beautiful! What more could you ask for?

 Figure-Friendly Fruit Pizza

 Ingredients

8 oz. container of weight-watchers cream cheese

8 oz. container of fat free cool whipimages15

6 oz. container of fat free fruit flavored yogurt (any kind) *optional*

1 tube of low fat refrigerated sugar cookie dough (I used Trader Joes brand)

Assorted fruits. (pineapples, kiwi, peaches, strawberries, blueberries, etc) The amount of fruit needed will depend on your design.

 Directions

Step 1.) Preheat oven to 350. Spread cookie dough evenly onto a pizza pan to form the crust.

Step 2.) Bake for 10-12 minutes or until golden brown.

Step 3.) In a large bowl beat cream cheese and cool whip until creamy.  If you desire more sweetness add in the fruit flavored yogurt.

Step 4.) When cookie is done and completely cooled, spread on the cream cheese mixture. Cover and refrigerate for at least 3 hours.

Step 5.) Cut up your fruit and when cream cheese mixture has set, arrange it in any design you’d like.

Dig in and enjoy!!!
