Broccoli and Carrots side dish

DSCN2238Our good friends at Tropical Traditions gave us a 32oz of there Virgin Coconut Oil to experiment with, and over the next few weeks we’ll be hard at work in our test kitchen.  Last week we tried a delicious a Berry Coconut Smoothie.  This week we tried a side dish using Virgin Coconut Oil~ Asian inspired Broccoli and carrots. 

  • 1 bunch broccoli washed, trimmed and cut into florets
  • 3 carrots peeled and chopped into slices
  • 1 tablespoons soy sauce
  • 1.5 tablespoons Tropical Traditions Coconut Oil
  • dash of hot pepper flakes
  • sesame seeds to sprinkle

Steam the broccoli and carrots for approx. 5 minutes.  While hot stir in the coconut oil and soy sauce.  Sprinkle with sesame seeds.  Great side dish for Asian cuisine.

I was pleasantly surprised at the taste of this.  The kids even enjoyed the vegetables.  It was a great accompaniment to our brown rice and ginger beef dinner.  Stay tuned some a great Thai recipe I’m dieing to try using this oil.

    Broccoli and carrots are the only two veggies my kids will eat! Thanks for a creative way of serving them (because boy am I tired of eating them)
