Ratatouille-Weight Watchers One Point Recipe

The Autumn weather has been so wonderful on our West Coast this month. It got me thinking about our glorious harvest and how I could put them all into a light, healthy recipe. At a recent trip to the farm market, I checked to see what was from my local farms. It is eggplant, zucchini, onions, tomatoes, corn and squash. So from the farms, I decided to make our little mouse’ favorite ‘Ratatouille’ just like the movie, weight watchers style. This is only a one point weight watchers delight!
Ratatouille Recipe
Ingredients:
- 1 medium eggplant, cut in 1” cubes
- 1 medium onion, chopped
- 1 large tomato, cut in 1/2-inch pieces (or 14 oz canned diced tomatoes)
- 1 small zucchini, chopped in 1/2-inch pieces
- 5 garlic cloves, sliced thinly
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- 1 tsp paprika
- 1/2 cup black olives
- 8 ounces fresh mushrooms, sliced
- 1/2 red pepper, chopped
- Parmesan cheese (fresh if available)
Directions:
Preheat oven to 400F. Add all the chopped vegetables to a cookie sheet sprayed with oil except the tomatoes and mushrooms. Pop into the oven for about 15 min. Mean while spray a pan with oil and add the sliced mushrooms and garlic. Stir-fry them with a little dash of the balsamic vinegar. After 15 minutes is up add the tomatoes to the oven mixture for about 10 more minutes. Remove the pan from oven and add the mushroom mixture to a serving dish. Toss with the rest of the vinegar, season and top with Parmesan. Serve immediately.
Serving size = 1 cup
Each serving = 1 Point Total
To make the meal a little more filling, add some canned beans. I had the leftovers with some brown rice for lunch the next day and I think it even tasted better. Yummy-O!
